Strawberry Cheesecake Chocolate Cups

Strawberry Cheesecake Chocolate Cups...

This fancy little treat couldn't be any easier. Thanks to my buddy Steve The Tortilla guy I have some fancy Tumaro's Tortillas Chocolate Wraps (you can find these in many stores and if you don't see them - ask the manager to order them in!). I wanted to do something a bit off the reservation with them so I decided to turn the wraps into cups and add a nice filling.

Tumaro's Tortillas Chocolate Wraps, cut into rounds
Philadelphia ready made Cheesecake filling
Strawberries, fresh and quartered (or smaller if desired)

Cut the Tumaro's Tortillas Chocolate Wraps into rounds that will fit into an individual cupcake pan - you will want them smaller than the full cup - maybe to go up about half way. Once you have the pan filled with the rounds bake at 350 for 10-20 minutes, or just until they turn firm. Once the rounds are finished let cool in the pan then remove to a wire rack. Put a few tablespoon fulls of the cheesecake filling into each cup. Top with the strawberries and serve. Eat & Enjoy!

Chicken Finger Wraps

Wraps... They are one flexible food group. I've used a wrap to make simple sandwich, hold salads, baked for desserts, breakfast, lasagna, and I've even made a really good chicken wellington. When they are available I always use Tumaro's Tortillas - they're simply the best I've ever had. If your market doesn't have them - ask them to order some in. I did at my local store and they now carry them all the time. Anyhoo, here is a video with two different ways to do a chicken finger wrap.

2 Tumaro's wraps
4 Chicken Fingers
.25 Cup Cilantro
.25 Cup Tomato
.25 Cup Red onion
.25 Cup Lettuce
.25 Cup Cheese
Sour Cream, to taste

You can use as little or as much of the ingredients as you want.

The first part of the video shows putting it all inside the wrap and the second is an outside version - the outside looks better but it's a knife and fork deal...

Happy Birthday Tortilla Guy...

Well it's my buddy Steve The Tortilla Guy's birthday today. I can't bake a cake to save my life so I'm just making a happy b-day blog post for him... Happy birthday buddy...






The Hummus Wrap


First things first - Start with a good wrap - I've said it before and I'll say it again, until I'm proven wrong the best wraps I've used come from Tumaro's Tortillas. This is one of my favorite wraps to do and it's the very first wrap in my upcoming book 101 Things To Do With A Tortilla!







Tumaro's Spinach wrap
Shredded lettuce
Red Onion
Cucumber, seeded
Tomato
Feta Cheese
Hummus
Salt
Pepper

To build - Lay down your wrap and slather on some hummus. Top that with the lettuce, cucumber, tomato, feta, and salt and pepper (given the feta is salty watch how much salt you use). Fold in the sides of the wrap and start rolling from the back. Eat & Enjoy!

Mojitos For Steve

So my buddy Steve the Tortilla Guy loves Mojitos - I decided to make this video in honor of him...

To make a Mojito you will need...

4 mint leaves
1 lime, juiced
1 ounce simple syrup
2 ounces white rum
2 ounces club soda
1 sprig of mint, for a garnish if you wish
ice

Juice the lime into your glass, add the mint and simple syrup. Muddle the mixture in the bottom of the glass. If you do it with a piece of ice down there it will really mix up the mint which is nice... Add the rum, top with the soda, garnish with a slice of lime and the mint - Drink & Enjoy!

The South West Breakfast Wrap

What you are about to read about and see could be deemed healthy...

1 Tumaro's Chipotle Chile Tortilla Wrap
.25 Lb Boars Head Cajun Turkey, cubed
5 Egg whites
2 Tbsp hatch chilies
2 Tbsp non-fat sour cream
.25 Cup tomatoes
2 Tbsp chipotle cheddar cheese

Heat the cubed turkey in a skillet over medium heat. Separate the eggs and put the whites in a bowl. Add the hatch chilies and sour cream to the egg whites and beat well. Add the egg mixture to the turkey and cook until the eggs are done to your liking - just remember if the eggs are done in the pan they will be overdone on the plate... Mix in the tomatoes and cheese. Build your wrap - lay down the wrap - add your egg mixture towards the back of the wrap - roll the wrap over the mixture - tuck in the sides and continue rolling. Cut on the bias, plate, eat & enjoy...

Tumaro's Chocolate Wraps w/ Cheesecake Filling & Strawberries


Well this treat couldn't be any easier. Thanks to my buddy Steve The Tortilla guy I have some fancy Chocolate Tumaro's Tortillas Wraps. I wanted to do something a bit off the reservation with them and make them into little cups then fill them with goodness.

These were all sorts of good...

They started with a Tumaro's chocolate wrap - I took them and cut them into 4 small rounds (I used a ramekin to make it easier). They were baked in a cupcake pan at 400 for about 10 min. It was amazing to see how the flavor developed once baked - they were amazing. I added a spot of chocolate syrup to the bottoms then I filled them with some cheesecake filling (I bought the Philly pre-made stuff at the market to make it easier). Topped them with some fresh strawberries that I had put a bit of sugar on and let sit for 20 minutes - and done... The only thing I'd change for next time is to make smaller rounds and use a smaller cupcake pan so they were bite sized...

The BTC Wrap

I didn't eat much yesterday and when I was finally hungry all I could think about was a BLT. I looked in the fridge and I had all I needed except I was missing the L... I didn't let that stop me - Let me take a moment to say that when making a recipe if you don't have one particular item it doesn't mean you can't make the dish. Of course if you're making chicken marsala and you don't have any chicken you might be in a pinch - but if you don't have any pepper it's not like it's going to kill the dish to omit it. Anywho, my buddy The Tortilla Guy sent over a heap load of Tumaro's Wraps the other day and for the first time in all the shipments he's sent me the Priemium White Tortillas were in there! There is a difference in the tortillas at the store and let me tell you that Tumaro's Tortillas are the best I've ever had. They taste great and are a far superior product than the others...

Back to the BTC Wrap - I had Bacon, tomatoes, and well there's always a heap load of cheese in my fridge. So, you start with a wonderful Tumaro's Tortillas Wrap, lay down some many if that's your thing, add some cheese (I used the Kraft Deli American), tomatoes, a bit of salt and pepper, and finally your Bacon. Wrap, Eat & Enjoy...

1 Tumaro's Tortillas Wrap of your liking
1 Tomato sliced to your liking
4-5 Strips of cooked Bacon
Lettuce
Cheese if you like that on your BLTs
Mayo
Salt
Pepper
